Mushroom Tenders

My first-born loves to eat all the weird, wonderful food in the world! I scored the jackpot with him; he eats everything that I ask him to try and he rarely calls something yucky. However, I am not as lucky with my second-born. She makes a face at anything that is not a hotdog, pasta, or berries. She usually refuses to try anything new, and when I finally manage to get her to take a bite, she makes a face and says “Yucky”. Most days I feel so defeated by Thea’s eating habits, trying to get her to eat vegetables is worse than getting teeth pulled at the dentist! I’ve started to compile a list of recipes that disguise veggies. This one is one of the best!

These Mushroom Tenders are crunchy and salty on the outside and have a similar texture of chicken nuggets on the inside. They look like a chicken tender and they fooled my kid! They are pretty basic and quick to make, perfect for a hungry toddler at lunchtime! Here is the recipe…

Ingredients:

3 Portabella Mushrooms

1/2 Cup Flour

2 Large Eggs

1 Cup Italian Breadcrumbs

1/4 Cup Crushed Potato Chips

1 Teaspoon Salt

1/2 Teaspoon Pepper

1 Teaspoon Garlic Powder

1/2 Teaspoon Italian Seasoning

Oil for Frying

Instructions:

Fill a frying pan with 1/2 inch of oil and set it over medium heat. While the pan is coming to temperature, cut the mushrooms into 1 inch slices. Place the flour, eggs, and breadcrumbs into 3 separate bowls. To the flour, add the salt, pepper, garlic powder, and Italian seasoning. To the breadcrumbs, add the crushed potato chips.

Now you can begin to coat the mushrooms in the flour mixture. Once coated with flour, move the mushroom slice to the egg wash. Then once fully coated, move them to the breadcrumb mixture. Repeat this until every mushroom slice has been breaded.

Carefully place the breaded mushrooms into the hot oil. Fry on one side for 3-4 minutes, until brown. Flip them over with tongs and allow the other side to cook for 2-3 minutes. Remove the browned tenders from the pan, and put them on a plate layered with paper towels to rest for 2 minutes. The mushroom tenders can be eaten plain or with your favorite dipping sauce! Enjoy!
